Our Beer
Our facility is Northern Ontario's newest craft brewery! Definitely worth checking out. We've been busting our butts all winter long to continue providing you with the finest brews the North has to offer! Located on Hwy. 117 in Baysville, around 400 m from the town docks on the South Muskoka River. The building features high ceilings, lots of natural light and large windows for public viewing. We included plenty of room for expansion should everyone decide they like our beer! Most importantly, the brewery has a retail store where you can find our brews on sale in bottles and in kegs, and outfit yourself with some brewery schwag! Our take on a traditional Quebecois style of beer. In response to customer requests for a darker beer than our popular Pale Ale, we have come up with a flavourful blend of dark roasted malts and spicy hops for an unforgettably smooth and aromatic drinking experience! Need we say more?
Our PALE ALE is light in colour, but don't let that fool you — this beer has flavour enough to satisfy even the most demanding connoisseur (known in the industry as a "beer geek"). A beautiful, slightly sweet malt flavour, with just a hint of roasted grains, is balanced by medium hop bitterness and fresh citrus notes from our premium imported hops. An amber-coloured ale for beer drinkers of all stripes.
Our PALE ALE is an amber-coloured American-style pale ale with a fresh citrus/floral hop aroma, slight caramel malt sweetness, medium hop bitterness and a clean, dry finish. Our aim throughout recipe development has been to create an approachable, highly drinkable beer without sacrificing our "craft beer" credibility. We've kept our recipe simple, based on the belief that good beer is mainly the result of quality ingredients and consistent procedure. We're sure you've heard it before — "brewed with twelve different kinds of malt and seven distinct hop varieties, to ensure that extra-special flavour!" That's not us. During our months of testing and experimentation, we found that it was actually harder to brew a flavourful, well-balanced pale beer, than to throw a whole ton of ingredients into the process and come out with a dark, full-bodied, punch-you-in-the-face-with-hops sort of brew. A brewer, a coffee roaster and a craft beer snob walk into a bar in Muskoka. The result: a rich winter beer, full of coffee, chocolate and roasted barley. Perfect with a hearty meal on a cold winter's night. Cheers!
Lake of Bays MOCHA PORTER is our new (and tasty!) winter seasonal beer. We use roasted barley and chocolate malt to give this beer a full, rich character, balanced by the addition of several kilograms of real ground coffee right into the mash. As with our Pale Ale, the focus in recipe development has been to keep things simple, and create a balanced, flavourful beer that leaves you wanting more after the last mouthful. We've deliberately kept alcohol content in the "reasonable" range on this one, the idea being that you can share a bottle or two with a friend without ending up on the floor! If everyone likes it, we'll fire up the brew system and continue with more production runs throughout the winter.
The Mocha Porter project was initiated by Jed Corbeil and Curt Dunlop of the The Griffin Pub in Bracebridge, who put forward the idea of producing a collaborative beer using a range of goods produced right here in Muskoka. We teamed up with the Griffin, Diesel House Coffee Roasters and Savour Muskoka, our local food producers' association, to create a beer with truly local character!
